CULTURE ASSIGNMENT : " KUIH BAHULU"

KUIH BAHULU

First of all let me introduce myself first, my name is Nurakidah Ahmad. I am one of the traditional cakes' fans ever! There are a lot of traditional kuih or cakes that I had pay much of my times eating on them a lot such as dodol, ketupat, lemang, kuih bangkit, kuih ketayap and so on. But now, I would like to tell you guys about one of my favourite kuih which is kuih bahulu! I bet if you are a Malaysian you must know right how it looks like? For the others who are not familiar enough with my super delicious favourite kuih bahulu, let me introduce it to you guys.

This is a homemade bahulu from Penang

Here is it. This is what we called as kuih bahulu. Kuih Bahulu  is a traditional Malaysian cake that everyone enjoyed by all ages. These mini cakes are baked in bahulu moulds that come with various shapes and sizes. Traditionally, it is baked with hot charcoal and the mould comes with a lid or rather a bowl for filling charcoal. Good bahulu should have crispy edges and soft inside.Do you know how bahulu got it names? Based on the folkstories, Kuih bahulu or baulu got their names by the phrase of ‘buah tangan dari hulu’ that always have been said by all those local people when they visiting each other. Backwards, Kuih bahulu is usually considered as a gift from a person to another person as a symbolic of strenghthen the relationship among them while visiting. So from that words it becomes shorten until it sounded like ‘Bahulu’ or ‘baulu’. It is very interesting right?

Before I forget, I have a story of myself with this Kuih Bahulu. And of course it was not such an overwhelming story or what because it was definetely a very horrible experienced ever. The incident was happened while I was only six on that particular time. On that day, my beloved mom came home with a container full of small cute cake. Obviously, it was Bahulu cakes. But, on that time I was a very poor innocent child ever, so I did not know what was that actually. I was just pick a huge amount of the cake in my hand as they were very small to just take only one, and after that I ate them continuously without any break. Guess what? Yes of course  it nearly choked me to death with their dryness. My mom was the one that was very shocked and chaotic. So, from that time being I banned Kuih Bahulu for me to eat until the day of my brother’s wedding ceremony. We need to pack the Bahulu itself as the dooorgifts for guests. Starting from that time, I turned myself to my old norms which is Bahulu is my favourite cake ever.

This is another version of Bahulu with chocolate chip filled inside

Alright, enough of my nonsense story, let me share with you guys about this. Last fortnight ago, I went to Aeon Big Mall near of  my house. There, I saw three young lady was busy baking the Bahulu cake at their kiosk. What that make me felt so proud with them is they are so young to do all that things but they managed to run their business well without any problems at all. By looking at them, suddenly I remembered my childhood memories when me and my family sat together preparing for making the Bahulu.

Bahulu was baked in the hot oven in its own mould

I did asked them on how they started their business. They said that they started it by seling a small amount first and when there were already many booking, then they start to plan to buy a machine for doing the process of making bahulu to ease their own work. But still, even they have machine to stir the batter, the first prepared before baking was fully made by themselves as they want to preserve the home made version of their Bahulu itself.

By the way, I did asked them on their recipe to make the bahulu. And here, I am freely want to share to you guys about the recipe on how to prepare a very soft sweet  and delicious bahulu cake. Before that, here are a few tips in making kuih Bahulu which is the new mould will have problem of batter sticking on it, so grease the mould well and heat it up before first use. Subsequently, grease the mould before baking the next batch.

Ingredients:
4 eggs
100 g sugar
100 g all purpose flour (dry fry so as to prevent cakes from sticking to moulds)
1 tbsp cornstarch/tapioca flour
1/4 tsp baking powder and 1/2 tsp vanilla extract
Method:
Whisk eggs and sugar in a stand mixer (no more springy whisk) until light and fluffy. Sieve flour, cornstarch/tapioca starch and baking powder and add 1/3 into the egg mixture. Fold in lightly and repeat until all the flour is added in. Remember to fold in lightly as not to deflate the egg mixture. Grease moulds and fill with batter.Bake for 8 on preheated oven at 375F .
